Tony Vallone delivers a magical evening in Houston, Texas

Last night — the fourth night of our Rolling Thunder Cantele Tour USA 2013 — found us in Houston, Texas where we dined with wine bloggers Sandra Crittenden (author of Wine Thoughts, far left), Amy Gross (of VineSleuth, to Paolo’s left), and Dan Redman (founder and owner of Cantele’s Texas broker Mosaic Wine Group, to the right of Jeremy of Do Bianchi).

That’s our after-party at the amazing Camerata wine bar.

But the real party got its start at Tony’s, the legendary Houston fine-dining establishment where the power crowd dines side-by-side with the city’s leading foodies.

Tony graciously treated us (and good friend and colleague Alfonso Cevola, who didn’t make the after-party) to a mini-soufflé filled with a Alba white truffle fondue…

That’s the soufflé as it arrived at the table.

And that’s the soufflé filled with the fondue, made using the first white Alba truffles of the seasons.

This dish was as decadent as it was thrilling.

Thank you, again, Tony, for such a generous treat and such a wonderful evening.
