We really loved this recipe for Ciceri e Tria posted by the Ravenous Traveler, Mattie Bamman, who spent a few years in Puglia learning and writing about its foodways and wines.

Ciceri e Tria (chickpeas and noodles), a sine qua non of Pugliese cooking, seems like an easy dish to execute but it’s not: it takes just the right proportions and a deft hand to get it right and Mattie’s recipe is right on the money.
